    Love, love, love your blog…. Oooh, I never considered fancying-up my latkes with creme fraiche and caviar. I found the formula approach very freeing, as I could make more as needed rather than having a bunch amount of batter turning colors as I fried the rest.

    I recently discovered the joy of lox on latkes. My family is from the East Coast of Canada.

      Pam — That sounds like so much fun. This Southern girl just made her first batch of latkes, and they turned out great!

      So, SO much easier and the strands are so much more pretty and uniform. When I finish using mine and it is dry, I rub it very lightly with a neutral oil and turn the heat up on high for a couple minutes then wipe out any excess once it is cooled.

      Good standard recipe and technique. Also I use canola oil.
